Healthy, Tasty, and Light: The Ultimate Sprout Salad

Sprouts are essential in our diet as they provide fibre for easy digestion and help manage weight. Those who are desirous of reducing weight swear by the sprout salad. Sprouts are packed with Vitamins A, C, E, and K and contain minerals like iron, potassium, and magnesium. An added advantage is that you can add vegetables and seasonings of your choice to make a delicious sprouts salad.

Today’s salad is green mung bean salad.

Ingredients

  • 1 cup Mung beans (sprouted)
  • 1 finely chopped onion
  • 1 diced tomato
  • 1 grated carrot/beetroot (take ½ if it is a big beet)
  • 1 chopped cucumber
  • 2 tsp boiled corn (optional)
  • Salt
  • Black pepper powder
  • Cumin powder
  • Lime juice
  • Cilantro for garnish

Method

  • Take one cup of mung bean sprouts and blanch them in hot water, till soft (not too mushy)
  • Drain the water and put the sprouts in a bowl
  • Add chopped onion, tomato, carrot, beetroot, cucumber, corn or any other veggies of your choice
  • Mix and add salt, pinch of black pepper powder, pinch of cumin powder, pinch of chaat masala and 2 tsp lime juice and mix well
  • Garnish with cilantro, and the salad is ready to eat
  • You can add some honey or olive oil if you like

This salad is filling and has a host of benefits that keep you hale and hearty.
