Khagina: More Than Just Spiced Eggs

Introduction

You might have seen this egg dish going viral online, especially after Aditi Rao Hydari talked about it.

If you are in the mood for something rustic, spicy, and full of desi flavour, let me introduce you to Khagina, a dish that instantly won me over.

This is not your average scrambled egg recipe. It has got layers of flavour, a good dose of heat, and a spicy little twist that takes it to the next level.

Ingredients

  • Oil
  • Ginger garlic paste
  • Onions, sliced
  • Green chillies
  • Eggs
  • Red chilli powder
  • Salt
  • Fresh coriander

How to Cook

  1. Take a pan, pour some oil into it.
  2. Once it is hot, add some ginger garlic paste and give it a quick stir.
  3. Now, add half an onion (sliced) and a couple of slit green chilies. Cook until the onions turn light pink.
  4. Crack two eggs into the pan and place them gently over the onions.
  5. Cover the pan with a lid so the eggs can cook properly, but do not flip them; the yolk stays on top like a sunny side up.
  6. While the eggs are cooking, make a quick spicy paste (ellipaya karam) by grinding some garlic, red chilli powder, and salt together.
  7. Once the eggs are done, spread this paste on top.
  8. Finish with a little chopped coriander on top, and serve hot with roti.

A few personal tips

  1. I used too much onion the first time, but using half an onion for two eggs works well.
  2. Sprinkle some black pepper too; it boosts the flavour.
