- To make Spinach soup start by washing and roughly chopping fresh spinach and onions
- In a pan, heat any preferred oil or butter, add chopped garlic and chilies, and sauté till it turns golden.
- Add chopped onions, crushed black pepper, and bay leaf to the pan. Sauté till the onion turns translucent and add chopped spinach. Cook for a few minutes then take off the stove and let it cool.
- Once cooled, blend the mixture with some water or vegetable broth until smooth.
- Return the blended mixture to the stove add salt adjust consistency with more broth or water and simmer for a few minutes
