Puffed rice is called ‘mamra’ in the Gujarati language. There is a very simple recipe to make a puffed rice snack in most Gujarati households.
Vagharela mamra – aka spicy puffed rice
- Heat some oil in a pan
- When the oil is hot, add mustard seeds
- Add some turmeric powder and a pinch of asafoetida (hing)
- Immediately add the puffed rice, salt and red chili powder with a pinch of powdered sugar (Gujaratis love sugar in their dishes)
- Mix well for 2-4 minutes, stirring in between
- Turn off the gas stove and allow the mixture to cool before serving or storing it.
You can add roasted peanuts or garnish with sev, if you wish. You can add a dash of lemon if you prefer tanginess.
