Spinach in Winter: A Nutrient-Rich Choice for Healthy Soups

Spinach is a vital leafy vegetable particularly beneficial during the winter months. Cold temperatures stimulate the production of natural sugars, leading to the harvest of sweet-flavoured spinach compared to summer-grown.

Additionally, spinach is rich in important nutrients making it an essential food choice in the colder months when the body needs extra care.

Spinach Soup

 

  • To make Spinach soup start by washing and roughly chopping fresh spinach and onions
  • In a pan, heat any preferred oil or butter, add chopped garlic and chilies, and sauté till it turns golden.
  • Add chopped onions, crushed black pepper, and bay leaf to the pan. Sauté till the onion turns translucent and add chopped spinach. Cook for a few minutes then take off the stove and let it cool.
  • Once cooled, blend the mixture with some water or vegetable broth until smooth.
  • Return the blended mixture to the stove add salt adjust consistency with more broth or water and simmer for a few minutes
