Beetroot Tomato Carrot Soup

- For making Carrot, Tomato, and beetroot soup wash, peel, and chop carrots and beetroots and pressure cook along with some green chilies, and tomatoes for about 10 minutes. Alternatively, the vegetables can also be roasted or baked in the oven till they turn soft and mushy
- Heat any preferred oil or butter and add cumin seeds allowing them to splutter. Next, add chopped cloves of garlic, and once they turn golden add bay leaf and crushed black pepper
- Add the cooked vegetables, season with salt, and blend the mixture with the help of an immersion blender. Adjust the consistency by adding water if required and simmer for a few minutes
- Serve warm garnished with croutons or with grilled cheese.
